Hi, so glad you're back!
Oh yes, thinking about diet. By this I don’t mean going
on a diet, it’s just your regular way of eating. Over
the years I’ve gravitated to several good-for-me and
good-tasting treats and I’d love to share them with
you, ok?
Have you tried toasting a piece of bread topped with cottage
cheese and strawberries? This little version of a cheese cake
really does taste great! Think of the varieties you could
throw together! How ‘bout some mozzarella, tomato and
basil? Waaaay tastee... |

Small
Frequent Feedings
By Darcy
OK, I’m out of the closet! The truth be known! I’m a real
snacker, morning ‘til night. Now, they always say that multiple
small meals is the best way to live, and I believe this. I just do it
with good stuff that I like. I try not to eat white sugar or flour. A
snack for me can be a wedge of smoked Gouda cheese and a handful of cherries,
or some peanut butter on a spoon dipped into a bunch of blueberries. Water,
Water, Water! Warning: too much water late in the day means I’ll
have to get up in the middle of the night more times-- We usually have
a dinner of fish or chicken or we order in, and split one main course
with one appetizer. I try to work in my greens everyday, and I still take
an herbal supplement to keep myself regular. (Very tricky stuff: I basically
had to re-teach myself have a bowel movement - but that’s another
story...) Anyway, we cook together most nights - I try to prep things
early when I have the most energy, then tell my husband what to compose
to make the meal. We have it down to a science! We throw together seared
scallops and pasta (made with flax flour) a salad, and maybe some grapes.
It’s a $15 meal (in a restaurant) done in 30 minutes: at home! My
husband always has chips on the plate, I skip that. There are many other
ways to get a good “salt lick.” Try some fresh nuts! Salted
soy beans, or even some soy sauce in your cooking. It won’t taste
like soy sauce, but the flavor will be deeper.

What’s an average lunch for me? A few sticks
of celery stuffed with cashew nut butter. (we’re talking Yum!)
And a few blackberries, too. I try to slip these water rich foods
(like celery) into my diet whenever I can. Try it with crab or tuna,
or whatever! Great for my digestion! Your tongue will thank you.
